My wife often says, where there is smoke… there is Dave #truth!! The question I often get asked is… ‘Where did my passion for BBQ come from?’ When I was a young boy, my father would take us to an annual Pig Roast. We would dig a hole in the ground, wrap a whole hog in Chicken wire and Banana leaves and cook it all night long over Hot Lava Rocks. The best part was when the wire was pulled, the skin of the pig would stick to it. Us kids would be there to pick it off the wire, Pig Candy! My Dad had a Love for BBQ, and thus began my Love for it as well!
I’ve been Barbecuing my entire life. when we acquired a Tow behind Offset Texas Pit Smoker, that’s when it got real. It was Fugly! When I towed it home my wife asked, ‘what are you going to do with that’? My reply… Make MEMORIES! And we have done a lot of that! Every winter I pull it into the garage. My boys and I add or change something on it to improve its capabilities and eye appeal! It’s a looker!
Then, a few years ago I was looking through Craigslist for a Power Wheels Fire truck for our Grandsons upcoming Birthday. I did find one, along with a listing for a 1950 Ford Firetruck. I sent my wife a pic and said, ‘this will be ours’! Long story short, and after much prodding from HER, we bought a Firetruck. (Ask me about the entire story, it’s a good one!) From the moment I saw it, my vision was to make it into a BBQ Fire truck. It took a few years, with many challenges along the way. It has all come together. Countless hours have been put into it, with a lot of help from family and friends. it is definitely the Star of our show!
I have been very fortunate to travel the country and try various BBQ spots. Each region can bring a great uniqueness and authenticity to their own distinct Q. I have met a lot of great people along the way. Many friends and memories have been made and it certainly has influenced my cooking!
What feeds my Passion? When I hear, ‘that was absolutely the best Brisket I have ever had’, or ‘those Ribs were Amazing!’ That drives me, but it is more than the compliments. When we host an event, we are bringing people together. Good times, great food and often new friends are made. A gathering so special that they will remember it for a long time! Another motivator, the endless quest for perfect BBQ. It could be Brisket, Ribs, Pork Butt, doesn’t matter… It can always be better!
My adventure in BBQ would not be possible without the support or partnership from my better half. We are a team. We also have an agreement; I focus on the proteins, and she creates the sides. We don’t mess with each other’s ways of doing things! I’ve tried and it didn’t end well!

The DLUX crew catered our wedding reception recently and were the hit of the day! Not only was the food beyond our expectations and the serving/presentation top notch, the positive can-do attitude as they worked through a freak rain storm and power outage was truly amazing.
